NaturalNews.com has published another one of my articles. This one was mint (get it? get it?) to come out around the holidays, but I guess they had too much to publish at the time and it got stuck in a long line of articles waiting to see the sunshiney day of publishing. Check it out, try it out, and you won't be disappointed!
Mini Minty Chocolate Chip Muffins
These look great! Two questions:
ReplyDeleteWhat is your favorite brand bar mint chocolate then?
Do you make your own almond meal, or what brand do you suggest? By the way, is meal the same as flour?
I get the Endangered Species brand (http://chocolatebar.com/). It's a little bit pricey, which is why I reserve recipes like this for the holidays and other special occasions.
ReplyDeleteI don't make my own almond meal (don't have anything powerful enough for that), though I'd like to try it sometime. We use the Honeyville Grains brand (http://store.honeyvillegrain.com/) almond flour. And meal is the same as flour; the editor with NN won't let me call it flour for some reason. :)
Thanks!
ReplyDeleteI'll look for that brand. We bought xylitol to put in a homemade toothpaste recipe, and I'd like to try a baking recipe too. I'm sure you can make these in regular size tins too, but there just won't be as many.
I'd just brush with straight xylitol. Ha ha. YUM! This recipe is actually based on one that I traditionally make full sized, non-chocolate muffins with. The sky is the limit once you get a good base!
